Can someone tell me the difference between Zombie Carnage Event vs. Beacon Massacre Event? To me they both seem to be the same.

You're right, they're the same. 

The only difference is that Zombie Carnage is in Halloween style as Halloween is coming :)

This Event is just old faithful Massacre Event.

As always, it's up to the players whether take part in the Event or not. Moreover, during Massacre, you can revive 90% of Units. 

So, it's a good chance to show your power, enjoy great Battles and then revive your Units 

I recalled my fortress defense but it was not sent to the catacombs. Is this a bug or is it only beacon defense that is protected in this way?

Only troops returned from beacons go directly to catacombs.

On the 2nd question can't answer every marshal has his own strategy of playing the game :-)
