As soon as you have the designated time completed you need to shield.

The times vary according to which level you are doing,and it tells you what the time is and it normally shows you the running time and the time needed to finish the level.
As for all open,i.e. not secret,achievements, just click on them and it should tell you.

Does the time have to be consecutive, or can it be droken in segments?

You have to stay unshielded for the whole time stated previously, shield and you start again from the beginning of the time needed.
It is already easier to do than it seems at first, but if you could do it in small bits it would be too easy.
