The gem Beryl has a description that says warrior capacity, what does that actually do? I don't see an increase in the amount of troops in a march but in a section that says capacity i see the stat increase but what is it increasing?

Use it for yielding and plundering. Don't listen to Wikipedia.

Well-known varieties of beryl include emerald and aquamarine. Aquamarine is a blue or cyan variety of beryl. Emerald is green beryl. Morganite, also known as "pink beryl", "rose beryl" "pink emerald".

It seems almost everything in Vikings is Beryl.

When you send  troops to a tile the beryl gems increases troops capacity so you can send less troops to tiles during evens reducing casualties and  in between events you can empty a whole tile with less troops because of the increased capacity, Also when you hit a town you troops will be able to take more rss in one hit with their increased capacity.
