Different level limits for same-rank guardians
Why does one of my 5-star guardians (Grade III Seer) have a max level of 30, while another (Grade II Ambusher) max out at level 35??

This is not an error, you need to enlighten a Guardian first.

after reading your post and checking the wiki, http://wiki.plarium.com/index.php?title=Category:SWOE_Guardians the only reason i can imagine would be that the grade 2 is enlightned and the grade 3 is not... is that so?

● Rank II (★★): Max Level of Guardian: 20
● Rank III (★★★): Max Level of Guardian: 25
● Rank IV (★★★★): Max Level of Guardian: 30
● Rank V (★★★★★): Max Level of Guardian: 30 (if Enlightened: 35)
● Rank VI (★★★★★★): Max Level of Guardian: 30 (if Enlightened: 40)
(this is something i was discussing with my group yesterday, os i had it fresh, check if it is that)
