I have two quests to place 5 simultanious debuffs on Fire giant and the Dragon. However, every debuff my characters try to place on them the debuff gets blocked. Every one. I have spent a lot of energy trying and not a single debuff got through. Any advise? I am using my best and toughest characters. Two Legends and three Epics.

Which dungeon levels are you trying and what do your champ builds look like? I suspect this is an issue of you not having enough accuracy on your champions.

What debuffs are you trying to place? Dragon is immune to quite a few, so make sure you are placing ones it isn't immune to. Poison in particular is pretty easy to stack up.

You didn't answer my question. *What* debuffs are you trying to place?
EDIT - Also, for Fire Knight, you cannot place debuffs until after you break the shield, which requires a number of attacks based on the dungeon level.
All the quest said was place 5 simultaneous debuffs stage 5 wins only. so I'm not sure what else I am supposed to know. My team always breaks the shield but not always do they do the debuff when the shield is down.

I'm really not sure how I could be more clear with my question. What debuffs are you trying to place? Poison? Attack down? Speed down? Provoke?
Dragon is immune to a bunch of debuffs (such as, for example, speed down). Fire Knight is immune to *all* debuffs while the shield is up.
So I repeat my question. What debuff are you trying to place, that is resulting in the game telling you that the boss is immune?
Yep, we need more details of what you're trying to place, and in which dungeon. Poison, attack down, defense down are gonna be some of the easiest ones, assuming you have the necessary accuracy and have the fire knight's shield down, for that specific dungeon.
The bosses get higher res in higher stages. Why do you try to fulfill this quest at stage 22? I think, the 5 debuff quests can be done at stage 5 (!) or higher.
As a rule of thumb, you need minimum acc = dungeon stage x 10 to land your debuffs. And of course, you should not use champs with weak affinity to the stage you are doing. Weak hits can not place debuffs (with the exeption of Kantra the Cyclone).
